Wash mangoes, cut into small pieces, add salt, turmeric powder & cover it. Keep it in the house for two days so that all water comes out of mangoes.
After two days keep the mixture under sun for 4 to 5 days everyday.
For 10 mangoes you can take mustard seed 250 gm
50gm methi seed
100 gm panmadhuri seed
sugar 300 to 500 gm
150 gm whole dry chilli
a little bit hengu
Add sugar & vinegar.
Fry methi, panmadhuri, dry chilli one by one & grind. Grind mustard seed & add all powder with mangoes. Boil mustard oil with hingu & add the oil when it is cool. Mix all & keep it in a tight covered bottle. Pickle is ready.
